GRILLED TIGER PRAWNS WITH LEMON GARLIC BUTTER


Bringing the seaside to your plate today with this delicious and garlicky tiger prawn recipe.
It’s the perfect flavourful starter for a summer lunch. I cooked my prawns under my oven grill but you could also grill them on a barbecue flesh side down if you want.

✖️Ingredients (for 2 people)
4 wild tiger prawns from Veasey & Sons Fishmongers
1 large shallot
2 garlic cloves
Small bunch of fresh coriander
1 lemon
Chilli flakes
15g butter

✖️Method:
〰️ Cut each wild tiger prawn down the middle and remove the prawn’s intestine.
〰️ Place the prawns in a deep dish.
〰️ Finely chop the shallot, the 2 garlic cloves and a few leaves of coriander and place them in a bowl.
〰️Add the juice of half a lemon to the bowl. 
〰️Sprinkle the garlic, shallot, coriander and lemon juice over each prawn and add chilli flakes to taste.

〰️Cover the dish with cling film and let it marinate in the fridge for a few hours. 
〰️Remove the prawns from the fridge 30 minutes before cooking them.

〰️Pre-heat your oven grill to 200°C
〰️Grill the prawns for 7-10minutes
〰️Prepare the sauce while your prawns are in the oven.
〰️Heat 15g of butter in a small pan, add the other half of lemon juice and a handful of coriander, finely chopped.
〰️Serve the dish hot, place 2 prawns in a plate and pour the sauce over.

BRITISH SCONES

Today's recipe is a British delicacy, the ultimate treat to have with a warm cup of tea.
It only take 20 minutes.

✖️Ingredients (for around 8/9 scones)
8 tbsp of self raising flour 
1 pinch of salt - half tbsp of baking powder 
25g butter 
150ml milk 
Half tsp vanilla extract

✖️Method:

〰️ Heat oven to 180°C.
〰️ In a large bowl mix 8tbsp of self raising flour, half tbsp of baking powder, 1 pinch of salt.
〰️ Add 25g butter and rub in with your fingers until the mix looks like fine crumbs.
〰️Make a well in the centre of the flour, pour 150ml milk, tap vanilla extract and mix with a cutlery knife.



〰️ Put some flour on a flat surface, with your hand fold the mix until you have a smooth dough. 
〰️ Roll out the dough to a 3/4cm thick rectangle.
〰️ Cut as many scones as you can with the mix (8/9scones) and place them on a baking tray. 

〰️ Bake for 10 mins until risen and golden on the top. 
〰️ Eat them topped with jam and clotted cream.
